Quadruple Berry Pie

Mmm....pie!!! Even better...
homemade pie! :)
I went to a MOPS meeting today for the first time (will have to post about that some other time). The "activity" today was making homemade pies. And, it was great! It just so happens that the type of pie we were making is probably one of my favorites--berry! And, it not only enabled me to do something with the mulberries, but allowed me to start checking more goals off our 101 list! :) Goals number 66 & 67 are now in progress. I've not only not made this recipe before, but actually, I've never even baked a pie on my own before (not really sure how that happened!). And, we've never had mulberries before.

So, here's the SUPER easy recipe that we started with:
2-3 cups mixed berries (we just used the frozen medly from Costco)
1/2 C sugar
1/4 flour
1t cinnamon
Bake at 350 for 50 min.

My pie plate was a bit larger and I needed more berries...so, these are my changes:
about 4 cups mixed berries + approx. 1 cup of mulberries
3/4 C sugar
1/4 flour, plus an extra spoonful
1t cinnamon
plus juice from 1/2 a small lemon

Before putting the top on...
The recipe isn't exactly "exact". I just kind of threw things in that seemed right. I baked it in our convection oven & had no idea how long it would take, so just watched until the crust started looking done.
The top separated and the filling bubbled over a bit, but otherwise, it turned out great! The consistency is perfect and it tastes SOOO good! I'm quite pleased with my first pie-making endeavor! And hope that I'll be able to try other new recipes soon!
